Popiah Goreng Thai (Thai Springroll)

Resepi hari ni lari sikit dari menu sayuran tapi sayuran masih bahan lagi utama cuma saya menggunakan sedikit daging untuk mencari kelainan. Suatu ketika dulu pernah tengok Chef Wan buat popiah Thai ni kat TV tapi cara dia lain sikit. Ikut kaedah Chef Wan (resepi popiah Thai yang asli), daging tidak dimasak dulu; semua bahan digaul mentah dan terus dilipat dalam kulit popiah. Jadi masa menggorengnya kena lama la supaya daging di dalam betul-betul masak. Kalau tak masak, bahaya tu.. bakteria e.coli (sebut betul-betul ye). Lagi satu, selepas digoreng, sewaktu nak menghidangkannya, kena sediakan sekali daun salad. Daun salad dibalut pada popiah, macam pakai tuala le..hehe, lepas tu cicah dengan sos cili Thai yg dibuat sendiri. Macam tu le cara makannya.

Tapi resepi ni saya ubah sikit, saya masak dulu daging tu sekejap supaya tak ada risiko makan daging mentah dan saya tambah sikit serbuk kari daging. Jadi kalau makan tanpa sos cili pun okay dah sebab ada rasa pedas-pedas inti dia. Jom tengok bahan-bahannya yang mudah.

Bahan-bahan:

20 keping kulit popiah
250 g daging kisar (saya gunakan Ramly's)
1 biji bawang besar (dihiris)
1 ulas bawang putih (ditumbuk)
1 sudu besar serbuk kari
1/2 cawan air
1/2 batang lobak merah (dipotong memanjang)
sedikit kacang panjang (dipotong serong)
1 peket kecil su'un (direndam hingga lembut dan kerat-kerat sikit)
1 sudu kecil serbuk lada hitam
sedikit garam
minyak untuk menumis

Cara membuatnya:

1. Tumis bawang-bawang hingga layu dan masukkan serbuk kari,
2. Masukkan daging dan goreng hingga separuh masak.
3. Masukkan air dan biar mendidih hingga daging betul-betul masak.
4. Masukkan garam dan lada hitam.
5. Bila dah agak kering, masukkan lobak merah dan gaul, diikuti kacang panjang dan akhir sekali su'un. Masak hingga kering dan kemudian sejukkan sebelum digulung dengan kulit popiah.
6. Letak sedikit inti tadi di tengah-tengah kulit popiah dan gulung seperti biasa.
7. Sapukan sedikit gam ketika menutup kulit popiah untuk melekatkan hujungnya supaya tak masuk minyak ketika menggoreng. (Gam - ada yg gunakan putih telur, kuning telur; saya suka gunakan tepung gandum 1 sudu besar dicampur dgn sedikit air hingga jadi pes peket, tak bazir telur sebab nak pakai sikit je pun)
8. Goreng dalam minyak yang sederhana panas dan toskan dengan kitchen towel.
9. Hidangkan bersama sos cili.

Spaghetti with Chicken Mushroom Soup


Wow! It's been a while since I last updated my blog. Ohh.. must blame it on the internet connection here.. the broadband of course! I've terminated the old one which most of the time drove me crazy and I recently got myself a new one. No more broadband! Streamyx makes me smile every single day :)))))

Today is Sunday.. my lazy day (Arghhh! Rasa nak tidur je sepanjang hari), but somehow I'm craving for mushroom soup. So. I went to the supermarket, just to find out no sign of fresh mushroom on the rack..huh! Then I grabbed some spinach, tomatoes, green pepper, minced chicken and a can of mushroom soup..hehe.. gonna prepare super quick and super easy meal.. spaghetti with mushroom soup (versi cengkelat..huahua!).

Now, the ingredients :

1 packet of spaghetti (boiled and drained)

1 can of mushroom soup

300g minced chicken (i'm using ramly's)

2 tbsp butter

2 tbsp flour

1 onion (chopped)

2 garlic (chopped)

a handful of spinach (leave out the stem)

1 tomato (peeled and chopped)

1 green pepper (remove the seeds, then chop or slice)

1 tbsp of ground black pepper (tumbuk atau kisar)

1 cube of chicken stock (I'm using maggi..with no 'msg')

1 tsp white pepper

1 tsp salt

2 cups of water


The method is shown in pic below :


Melt the butter and add in the flour..

Keep stirring to avoid the butter turning brown.. (may take 2-3 minutes)

Add a cup of water, mix well and add another cup..

Pour in the mushroom soup and stir well..

In another pan, add 2 tbsp of olive oil and fry the onion. Put in the chicken and stir them together until the chicken is half-cooked.

Add the half-cooked chicken into the soup and mix well.

Add black pepper, chicken stock, salt and white pepper. Mix well.

Cook until boiled. Then turn off the heat.

Prepare the spaghetti.

In other pan, heat 1 tbsp of olive oil and put in all the veges..

Add a pinch of salt and leave them half-cooked before adding the spaghetti.

Mix them well. Done!
